What is Uric Acid?
Uric acid is the end product of purine metabolism — purines are natural compounds found in many foods and also produced by the body when cells break down. It is filtered by the kidneys and excreted mainly in urine, but when production outpaces excretion, levels in the blood rise. Measuring serum uric acid is useful because persistently elevated levels are the key driver of gout, and are also associated with metabolic conditions including insulin resistance and kidney disease.
What a high Uric Acid means
A raised uric acid result — known clinically as hyperuricaemia — is a signal worth paying attention to, particularly if you have joint symptoms or other metabolic risk factors, but a single elevated reading on its own is not a diagnosis of gout or any other condition.
- Diet high in purines or fructose. Foods rich in purines (such as red meat, offal, and shellfish) and high intake of fructose — particularly from sugary soft drinks and fruit juices — are well-established drivers of raised uric acid, as both increase purine turnover and uric acid production.
- Alcohol, especially beer. Alcohol — especially beer, which is itself high in purines — reduces the kidney's ability to excrete uric acid and simultaneously increases its production, making it one of the strongest dietary triggers for raised levels and gout flares.
- Reduced kidney excretion. The kidneys handle the majority of uric acid excretion, so reduced kidney function, dehydration, or certain medications (including low-dose aspirin and some diuretics) can impair clearance and push levels higher even without dietary changes.
Uric acid levels can fluctuate day to day with diet and hydration, and may transiently drop during an acute gout attack — so a single result may not fully reflect your usual baseline.
What a low Uric Acid means
Low uric acid is rarely clinically significant and is not usually a cause for concern on routine testing.
- Medications. Certain urate-lowering drugs (such as allopurinol or febuxostat, prescribed for gout) will intentionally lower uric acid; some other medications can also reduce levels as a side effect.
Very low levels are occasionally associated with rare conditions, but this is typically flagged and investigated by a clinician rather than being a routine concern for most people.
Should I be worried?
A single raised uric acid result — especially if you have no joint symptoms — does not mean you have gout or will develop it; many people with hyperuricaemia never experience a gout attack. That said, persistently elevated levels do increase risk over time and are worth discussing with your GP, particularly if you notice any joint pain, swelling, or redness, or if you have other metabolic risk factors such as high blood pressure, raised triglycerides, or obesity. Your GP may wish to repeat the test, review your kidney function, and look at the wider clinical picture before deciding whether any action is needed.
What actually helps
Several evidence-backed lifestyle measures can help bring uric acid levels down or prevent them rising further.
- Reduce sugary drinks and fructose. Cutting back on sugar-sweetened soft drinks, energy drinks, and fruit juices is one of the most impactful dietary changes you can make, as fructose directly stimulates uric acid production and is strongly linked to raised levels in population studies.
- Limit alcohol, particularly beer. Reducing alcohol intake — and especially swapping beer for lower-purine alternatives — can meaningfully lower uric acid levels; current UK guidance recommends no more than 14 units per week spread over several days, with alcohol-free days.
- Stay well hydrated. Drinking enough water — around six to eight glasses a day as a general guide — supports the kidneys in excreting uric acid efficiently and is one of the simplest, most accessible preventive steps.
- Moderate high-purine foods if gout-prone. If you have a history of gout or very high uric acid, moderating intake of red meat, offal, and shellfish is sensible, though for most people without gout a wholesale elimination is unnecessary and the effect of diet alone on serum levels is modest.
There is good supporting evidence for the following foods and food groups in helping to manage uric acid levels.
Low-fat dairy
Observational and intervention studies consistently show that low-fat milk and yogurt reduce uric acid levels, likely because dairy proteins promote renal excretion of urate.
Coffee
Moderate coffee consumption — both caffeinated and decaffeinated — is associated with lower serum uric acid in several large studies, possibly through effects on xanthine oxidase, the enzyme that produces uric acid.
Cherries and cherry products
Cherries have good observational evidence for reducing gout flare frequency and modest evidence for lowering uric acid, thought to be related to their anthocyanin and anti-inflammatory content.
Water and non-sugary fluids
Adequate fluid intake supports renal urate excretion; water is preferable to juice or sugary drinks, which can raise levels.
Vegetables (including high-purine ones)
Unlike animal-source purines, purine-rich vegetables such as spinach and mushrooms have not been shown to raise gout risk in large studies, and a vegetable-rich diet overall is associated with lower uric acid levels.
Whole grains and legumes
A dietary pattern closer to a Mediterranean or plant-based diet — including wholegrains and legumes — is associated with lower uric acid, likely reflecting reduced intake of animal purines and fructose rather than a specific food effect.
